1. Oatmeal, walnut and honey cookies

1 cup of rolled oats (105 g)
1 cup of chopped walnuts (150 g)
2 tablespoons of honey (50 g)
1 cup of wheat flour (120 g)
1 cup of butter (200 g)
2 teaspoons of baking powder (10 g)
2 teaspoons of ground cinnamon (10 g)
1 ½ teaspoon of salt (7.5 g)
½ cup of sugar (100 g)
Mix all the ingredients until you get a hard dough that we will shape into a ball.
We wrap it in plastic wrap and reserve in the fridge for an hour.
We remove the ball from the fridge and divide the dough into small equal balls. We crush the portions into a cookie shape and place them on a tray previously covered with baking paper.
Bake at 180ºC for 20 minutes.
Take them out, cool on a wire rack and serve.

2. Chocolate Oatmeal Cookies
1 ½ cup of rolled oats (150 g)
½ cup of chocolate chips or tears (75 g)
½ cup of brown sugar (100 g)
1 egg
½ cup of white sugar (100 g)
½ glass of milk (100 ml)
1 teaspoon of vanilla essence (5 g)
½ glass of mild olive oil (100 ml)
½ cup of flour (50 g)
1 pinch of salt.


Preheat the oven to 200ºC.
With a spatula or wooden spoon we mix the ingredients in a large container .
With the help of a spoon we take portions of the mixture of similar size and thickness. We place them on a baking tray lined with parchment paper or with a silicone base.
Bake at 200ºC for 20 minutes.
If they start to brown around the edges, they should be poked with a toothpick or small knife in the center to check that they are not raw .
If the cookies are ready, we remove them. Otherwise, cover with aluminum foil and leave them for another two minutes without burning.
Eliminate from the stove and let cool on the plate. Then we place them on a rack, taking care not to break them, so that they finish cooling.
3. Fluffy cookies


½ cup of butter or margarine (100 g)
½ cup of sugar (100 g)
1 cup of wheat flour (120 g)
1 egg
Vanilla or cinnamon


Preheat the oven to 180 ºC with heat up and down.
Beat the butter or margarine with the sugar in a large bowl until you get a fluffy and creamy dough.

Add the essence of vanilla or cinnamon.
Add the sifted flour little by little.
Knead with both hands until you get a compact mixture that does not stick.
We make a ball that we will put in the fridge for 15 minutes.
After time, the dough is stretched with a rolling pin, on a previously floured table, until it is one centimeter thick.
Cut the cookies with the mold of preference and place them on a baking tray lined with greaseproof paper.
Bake for 15 minutes or until the cookies are lightly golden .
Remove them carefully and allow to cool before serving. For a more attractive presentation, they can be sprinkled with icing sugar, ground cinnamon , etc.
